Winemaking: Vinified from Grapes of selected plots. After maturation trials, the grapes were harvested at their optimum maturation-phenolic/aromatic point-and transported to the winery, where the winemaking was conducted. After total and gentle crushing, it was maceration and fermentation, with reassembly in stainless steel vats at a controlled temperature of 28 º C for about 12 days. We thus obtain intense wines, elegant and with expression of the place.
Phase: After malolactic fermentation, the wines were aged in used barrels of French oak for about 12 months. It was subjected to a slight filtration before its bottling. In order to preserve its highest quality, it has been bottled without cold stabilization treatment, which may cause the formation of a deposit during its ageing in bottle. This wine has a bottle stage of about 3 months in order to achieve the complexity and the appropriate balance for its consumption.
